1 cast iron skillet 10.5-inch
1 foil for loosely covering skillet
1 grill or campfire grate to cook over hot coals
- 8 ounces tortilla chips
- ½ cup black olives sliced
- ¼ cup green onions sliced
- ½ cup tomatoes diced
- 3 cups taco cheese shredded (or favorite blend)
- 2 jalapeños sliced, seeds removed
- cilantro for garnish optional
- sour cream salsa, and guacamole for topping
Layer one third of the tortilla chips in the bottom of a 10.5-inch cast iron skillet.
Top with one third of the shredded cheese, half the black olives, tomatoes, jalapeños, and green onions.
Add another layer with one third of the chips and one third of the cheese.
Finish layering with the remaining chips, cheese, olives, tomatoes, green onions, and jalapeños on top.
Loosely cover the skillet with foil.
Place skillet on the grill over medium heat or on hot campfire coals and cook until cheese is melted, about 10 to 15 minutes.
Garnish with cilantro if desired and serve with sour cream, salsa, and guacamole.
- Ground beef can be pre-cooked and stored in the fridge or freezer.
- A disposable foil pan can replace the cast iron skillet.
