- 1/2 cup unsalted butter softened
- 1 package 8 oz cream cheese, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 package white cake mix
- 1/2 cup sprinkles divided
- 1/2 cup confectioner’s sugar
Cream together the softened butter and cream cheese until smooth.
Add the egg and vanilla extract, mixing just until combined.
Beat in the white cake mix until the dough is fully blended.
Stir in 1/4 cup of the sprinkles.
Refrigerate the dough for at least 1 hour or overnight.
Preheat the oven to 350°F and prepare a cookie sheet by greasing or lining with parchment paper.
Scoop rounded tablespoons of dough and roll each into a 1-inch ball.
Sprinkle the tops with remaining sprinkles, then roll each ball in confectioner’s sugar until fully coated.
Place dough balls about 2 inches apart on the cookie sheet.
Bake for 8 to 10 minutes, then let cookies rest on the sheet for 2 minutes before transferring to a wire rack to cool completely.
- Chill dough overnight for firmer cookies.
- Roll cookies in more confectioner’s sugar for extra sweetness.
- Store in an airtight container for up to 5 days.
