Equipment

  • 1 8×8 baking pan
  • 1 mixing bowl
  • 1 oven

Ingredients

  • 1/2 cup butter softened
  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg
  • 1/4 tsp almond extract
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 1/4 cup all-purpose flour
  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 4 tbsp butter softened
  • 1 tsp vanilla extract
  • 3 tbsp heavy cream
  • 1 cup powdered sugar
  • Christmas sprinkles to taste

Instructions

  • Preheat oven to 350°F and line an 8x8 baking pan with parchment paper or foil.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth and creamy.
  • Add the egg, vanilla extract, and almond extract to the butter mixture and mix until combined.
  • Gradually mix in the flour, baking powder, cornstarch, and salt just until the flour disappears.
  • Spread the batter evenly into the prepared baking pan and bake for 15 minutes; the center may look slightly raw.
  • Meanwhile, prepare the frosting by whipping softened butter and powdered sugar until combined.
  • Add heavy cream and vanilla extract to the frosting and whip until light and fluffy.
  • Once bars have cooled, spread the frosting evenly on top and add Christmas sprinkles.
  • Slice and serve immediately for softer frosting, or chill to set the frosting before serving.

Notes

  • For firmer frosting, chill bars before serving.
  • Almond extract is optional but adds a nice flavor.
  • Store bars in an airtight container for up to 3 days.
  • Use parchment paper for easy removal from the pan.
