Ingredients
  

  • 1 large frozen ripe banana sliced
  • Zest of 1 small lime or key lime
  • 2 tablespoons fresh lime or key lime juice
  • ½ cup vanilla or coconut Greek yogurt coconut based for dairy free
  • ½ cup light coconut milk or milk of choice
  • ½ cup fresh spinach
  • ½ teaspoon vanilla extract
  • Optional: 1-2 teaspoons maple syrup or honey for sweetness
  • Extra lime wedge for rimming glass
  • Graham cracker crumbs for glass rim
  • Whipped cream for topping
  • Shredded toasted coconut for topping

Instructions
 

  • Prepare the glass by wetting the rim with a lime wedge.
  • Dip the glass rim into graham cracker crumbs until coated evenly.
  • Add frozen banana, lime zest, lime juice, yogurt, coconut milk, spinach, and vanilla extract to a high powered blender.
  • Blend until smooth, adding more milk if needed for desired consistency.
  • Taste and add maple syrup or honey if additional sweetness is desired.
  • Pour the smoothie into the prepared glass.
  • Top with whipped cream and sprinkle shredded toasted coconut on top before serving.

Notes

  • Use coconut-based yogurt to keep the smoothie dairy free.
  • Add up to 2 cups of spinach for more color.
  • Boost protein by adding a scoop of vanilla protein powder.
