Ingredients
  

  • 1 cup cottage cheese low-fat or full-fat
  • 1 cup marinara sauce store-bought or homemade
  • 1/2 cup chopped bell peppers any color
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped spinach or kale
  • 1/2 cup shredded mozzarella cheese
  • Olive oil to taste
  • Salt to taste
  • Pepper to taste
  • Optional: sliced olives diced onions, fresh basil for topping

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Spread the cottage cheese evenly at the bottom of a medium baking dish.
  • Spoon marinara sauce over the cottage cheese layer.
  • Scatter chopped bell peppers, mushrooms, and spinach or kale on top of the sauce.
  • Sprinkle shredded mozzarella cheese and any optional toppings you prefer.
  • Drizzle olive oil over the assembled ingredients, then season with salt and pepper.
  • Bake in the oven for 20 to 25 minutes until the cheese is bubbly and melted.
  • Remove from oven, let cool slightly, and garnish with fresh basil if desired. Serve hot.
