Ingredients
  

  • 1 large egg
  • 3/4 oz 20g feta cheese
  • 1 small tortilla or slice of toasted bread
  • 1/4 avocado
  • Dried oregano to taste
  • Red pepper flakes to taste
  • Cooking oil spray or olive oil spray
  • Lemon juice for squeezing
  • Pickled onions for garnish
  • Chili oil for garnish

Instructions
 

  • Spray a small fry pan with cooking oil and crumble feta cheese evenly across the pan, including the edges.
  • Heat the pan over medium and cook the feta until it melts and starts to form a golden crust, about 2 minutes.
  • Crack the egg gently into the center of the pan on top of the melting feta.
  • Season the egg with dried oregano and red pepper flakes, then cook to your preferred doneness.
  • Warm the tortilla using a stove, oven, or microwave and spread smashed avocado with a squeeze of lemon juice on top.
  • Use a spatula to carefully lift the crispy feta and egg from the pan and place it on the prepared tortilla.
  • Garnish with pickled onions and a drizzle of chili oil before serving.
