Equipment

  • 1 skillet for browning turkey and onion

Ingredients
  

  • 1 lb ground turkey
  • 1 can 15 oz pumpkin puree
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz diced tomatoes
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tsp chili powder
  • 1 tsp cinnamon
  • salt and pepper to taste

Instructions
 

  • Brown ground turkey and chopped onion in a skillet over medium heat; drain excess fat.
  • Transfer turkey and onion to the crockpot.
  • Add pumpkin puree, black beans, diced tomatoes, minced garlic, chili powder, cinnamon, salt, and pepper to the crockpot; stir to combine.
  • Cook on low for 6-8 hours or on high for 4 hours.
  • Serve warm with optional sour cream and cilantro garnish.

Notes

  • Use fresh cilantro or sour cream as garnish for extra flavor.
  • Store leftovers in airtight containers in the refrigerator for up to 4 days.
  • Try adding a pinch of cayenne for extra heat.
