Ingredients
  

  • 2 cups Doritos finely crushed
  • 1 cup Doritos loosely crushed
  • 1 pound ground beef
  • ½ yellow onion diced
  • 1 teaspoon garlic minced
  • 12 ounces frozen corn
  • 1 packet taco seasoning
  • 1 14.5-ounce can petite diced tomatoes with green chilies, undrained
  • 1 cup sour cream
  • 3 cups Mexican cheese blend
  • Optional garnish: sliced green onions diced tomatoes, shredded lettuce, avocado, sour cream

Instructions
 

  • Preheat the oven to 350°F.
  • Spray a 9×13-inch casserole dish with nonstick spray.
  • Gently crush the Doritos: crush 2 cups finely and 1 cup loosely for topping.
  • In a large skillet, cook ground beef and diced onions until beef is browned; drain excess grease.
  • Add minced garlic and cook for 1 minute.
  • Stir in frozen corn, taco seasoning, diced tomatoes with chilies, and 2 cups finely crushed Doritos.
  • Remove skillet from heat and stir in sour cream and 2 cups of cheese.
  • Pour mixture into prepared casserole dish and bake for 5 minutes until warmed through.
  • Top with remaining 1 cup cheese and 1 cup loosely crushed Doritos.
  • Bake for another 5 minutes until cheese melts.
  • Remove from oven and serve warm, garnished as desired.

Notes

  • Crush Doritos inside a sealed bag using hands or a rolling pin for best texture.
  • Use Mexican cheese blend for authentic flavor.
  • Garnish with fresh vegetables to add freshness.
