- 2 cups Doritos finely crushed
- 1 cup Doritos loosely crushed
- 1 pound ground beef
- ½ yellow onion diced
- 1 teaspoon garlic minced
- 12 ounces frozen corn
- 1 packet taco seasoning
- 1 14.5-ounce can petite diced tomatoes with green chilies, undrained
- 1 cup sour cream
- 3 cups Mexican cheese blend
- Optional garnish: sliced green onions diced tomatoes, shredded lettuce, avocado, sour cream
Preheat the oven to 350°F.
Spray a 9×13-inch casserole dish with nonstick spray.
Gently crush the Doritos: crush 2 cups finely and 1 cup loosely for topping.
In a large skillet, cook ground beef and diced onions until beef is browned; drain excess grease.
Add minced garlic and cook for 1 minute.
Stir in frozen corn, taco seasoning, diced tomatoes with chilies, and 2 cups finely crushed Doritos.
Remove skillet from heat and stir in sour cream and 2 cups of cheese.
Pour mixture into prepared casserole dish and bake for 5 minutes until warmed through.
Top with remaining 1 cup cheese and 1 cup loosely crushed Doritos.
Bake for another 5 minutes until cheese melts.
Remove from oven and serve warm, garnished as desired.
