Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 1/2 cup pesto
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste
  • 1/2 cup shredded mozzarella cheese optional
  • 1/4 cup grated Parmesan cheese optional
  • fresh basil for garnish optional

Instructions
 

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • Season both sides of the chicken breasts with salt and pepper.
  • Place the chicken in the baking dish and spread pesto evenly over each piece.
  • If desired, sprinkle shredded mozzarella and grated Parmesan over the pesto-coated chicken.
  • Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  • Allow the chicken to rest a few minutes before serving and garnish with fresh basil.

Notes

  • Use fresh pesto for better flavor.
  • Omit cheese to reduce calories.
  • Store leftovers covered in refrigerator up to 3 days.
