Combine graham cracker crumbs, melted butter, and optional sugar. Press firmly into the bottom of an 8x8-inch baking dish and refrigerate.
Beat cream cheese until smooth. Add powdered sugar, butter flavoring, vanilla extract, and butterscotch syrup. Fold in Cool Whip and spread evenly over the crust.
Whisk pudding mix and cold milk until thickened. Stir in butter flavoring and butterscotch syrup, then fold in Cool Whip. Spread over the cheesecake layer.
