1 grill or grill pan preheated to medium-high heat
1 large bowl for marinating lamb chops
1 plastic wrap to cover bowl while marinating
- 6-8 lamb chops
- 3 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 3 tbsp lemon juice
- ½ tsp lemon zest
- ½ tbsp chopped rosemary
- 2 garlic cloves minced
- ¾ tsp salt
- ½ tsp black pepper
Combine olive oil, Dijon mustard, honey, lemon juice, lemon zest, rosemary, garlic, salt, and black pepper in a large bowl to create the marinade.
Add lamb chops to the bowl and coat evenly with the marinade. Cover with plastic wrap and refrigerate for 30 minutes.
Preheat grill or grill pan to medium-high heat.
Grill the lamb chops for 3 to 4 minutes on each side until desired doneness.
Let the lamb chops rest for 5 minutes before serving.
