Equipment

  • 1 grill or grill pan preheated to medium-high heat
  • 1 large bowl for marinating lamb chops
  • 1 plastic wrap to cover bowl while marinating

Ingredients
  

  • 6-8 lamb chops
  • 3 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 3 tbsp lemon juice
  • ½ tsp lemon zest
  • ½ tbsp chopped rosemary
  • 2 garlic cloves minced
  • ¾ tsp salt
  • ½ tsp black pepper

Instructions
 

  • Combine olive oil, Dijon mustard, honey, lemon juice, lemon zest, rosemary, garlic, salt, and black pepper in a large bowl to create the marinade.
  • Add lamb chops to the bowl and coat evenly with the marinade. Cover with plastic wrap and refrigerate for 30 minutes.
  • Preheat grill or grill pan to medium-high heat.
  • Grill the lamb chops for 3 to 4 minutes on each side until desired doneness.
  • Let the lamb chops rest for 5 minutes before serving.

Notes

  • Grill longer for well-done lamb chops.
  • Serve with salad, mashed potatoes, or grilled vegetables.
  • Marinate up to 2 hours for more flavor.
