Ingredients
  

  • 2 cups shredded Swiss cheese
  • 1/2 pound sliced corned beef deli meat
  • 1 cup sauerkraut
  • 1/4 cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 1/2 tablespoons sugar-free ketchup
  • 2 teaspoons Swerve confectioner’s sugar substitute
  • 1 tablespoon horseradish sauce
  • 1 pinch paprika

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • Arrange shredded Swiss cheese into 8 circles on parchment-lined baking sheets.
  • Bake the cheese circles for 6 to 8 minutes until edges are brown and crispy.
  • In a mixing bowl, whisk together mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve sugar substitute, horseradish sauce, and paprika to make the dressing.
  • Remove the cheese circles from the oven and let cool for 1 minute.
  • Top each cheese circle with slices of corned beef, sauerkraut, and a drizzle of the dressing.
  • Quickly fold the cheese circles over the filling before they harden to form roll-ups.
  • Allow the roll-ups to cool and crisp up before serving.

Notes

  • Use parchment paper to prevent sticking.
  • Try different cheeses to vary flavor.
  • Do not overcook cheese to keep it flexible for rolling.
