Ingredients
  

  • 1 pound Italian sausage casings removed
  • 4 cups fresh spinach chopped
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese softened
  • 3 large eggs
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a large skillet over medium heat.
  • Cook sausage until browned, breaking it up as it cooks.
  • Add minced garlic and chopped spinach to the skillet; cook until spinach wilts.
  • In a mixing bowl, whisk together heavy cream, cream cheese, eggs, salt, and pepper until smooth.
  • Combine the sausage and spinach mixture into the egg mixture and stir well.
  • Pour mixture into greased 9x9-inch baking dish; sprinkle shredded mozzarella cheese on top.
  • Bake for 25-30 minutes until casserole is set and cheese is golden brown.
  • Let cool slightly before serving.

Notes

  • Use mild or spicy sausage to adjust flavor.
  • Leftovers store well in the refrigerator for 3 days.
  • Can be reheated in the oven or microwave.
