1 large saucepan for melting butter and marshmallows
1 microwave-safe bowl for melting white chocolate
1 buttered spatula or wax paper for pressing the mixture
- 6 cups Rice Krispies cereal
- 3 tablespoons unsalted butter
- 3 cups mini marshmallows half lemon-flavored, half classic white
- Zest of 1 lemon plus extra for garnish
- 1/2 teaspoon lemon extract optional
- 1/2 cup white chocolate chips or melting wafers
- Lemon peel or zest for garnish
Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.
Melt the butter in a large saucepan over low heat.
Add the mini marshmallows and stir until melted and smooth.
Stir in the lemon zest and lemon extract if using.
Remove from heat and immediately fold in the Rice Krispies cereal until fully coated.
Press the mixture evenly into the prepared pan using a buttered spatula or wax paper, avoiding pressing too hard.
Melt the white chocolate chips in 20-second intervals in the microwave, stirring until smooth.
Drizzle the melted white chocolate over the top of the treats and garnish with lemon zest or peel.
Allow to cool and set for at least 30 minutes before cutting into squares and serving.
