Equipment

  • 1 large saucepan for melting butter and marshmallows
  • 1 microwave-safe bowl for melting white chocolate
  • 1 buttered spatula or wax paper for pressing the mixture

Ingredients
  

  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 3 cups mini marshmallows half lemon-flavored, half classic white
  • Zest of 1 lemon plus extra for garnish
  • 1/2 teaspoon lemon extract optional
  • 1/2 cup white chocolate chips or melting wafers
  • Lemon peel or zest for garnish

Instructions
 

  • Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.
  • Melt the butter in a large saucepan over low heat.
  • Add the mini marshmallows and stir until melted and smooth.
  • Stir in the lemon zest and lemon extract if using.
  • Remove from heat and immediately fold in the Rice Krispies cereal until fully coated.
  • Press the mixture evenly into the prepared pan using a buttered spatula or wax paper, avoiding pressing too hard.
  • Melt the white chocolate chips in 20-second intervals in the microwave, stirring until smooth.
  • Drizzle the melted white chocolate over the top of the treats and garnish with lemon zest or peel.
  • Allow to cool and set for at least 30 minutes before cutting into squares and serving.

Notes

  • Use parchment paper for easier removal.
  • Half lemon-flavored marshmallows add vibrant citrus flavor.
  • Press mixture gently to keep treats chewy.
  • Store in an airtight container for up to 3 days.
