1 cookie sheet lined
- 1 cup pecans
- 1 cup pitted dates soaked
- 2 tbsp coconut sugar or monk fruit
- pinch sea salt
- 1 tsp vanilla extract
- 1 tsp cinnamon optional
- 1 1/4 cups chocolate chips
Add all ingredients except chocolate chips to a food processor and blend until a sticky dough forms, scraping down the sides as needed.
Roll the mixture into balls and place on a lined cookie sheet, slightly flattening each with your palm.
Freeze the bites for about 15 minutes to firm up.
Melt the chocolate chips until smooth.
Dip each frozen bite into the melted chocolate, then place back on the cookie sheet and top with a pecan.
Return the bites to the freezer until the chocolate hardens.
