Ingredients
  

  • 1 cup All-Purpose Flour
  • 1/4 teaspoon Baking Powder
  • 1/4 teaspoon Ground Cinnamon
  • 1/4 teaspoon Kosher Salt
  • 8 tablespoons Unsalted Butter melted and cooled
  • 1 cup lightly packed Brown Sugar
  • 1 large Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Old Fashioned Rolled Oats
  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup M&Ms

Instructions
 

  • Preheat oven to 350°F (177°C). Line an 8×8 baking pan with parchment paper or grease it.
  • In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  • In a larger bowl, whisk melted butter and brown sugar until combined, then add egg and vanilla, mixing well.
  • Add dry ingredients to wet ingredients and stir until just combined, avoiding overmixing.
  • Gently fold in oats, chocolate chips, and M&Ms.
  • Pour batter into prepared pan and scatter extra mix-ins on top if desired.
  • Bake 24 to 28 minutes until edges are lightly browned. For softer bars, use shorter bake time.
  • Cool bars in pan until firm enough to slice, then cut and serve.
  • Store bars at room temperature for up to 3 days.

Notes

  • You can use only chocolate chips, only M&Ms, or both for mix-ins.
  • Try butterscotch chips or toasted nuts as alternatives.
  • Adjust total mix-ins to 1 1/2 cups if substituting.
  • Baking time increases by about 5 minutes if using glass or ceramic pans.
  • Bars stay moist for days if baked on the lower end of time.
