Ingredients
  

  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup olive oil
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup diced fresh or canned peaches drained

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, combine cottage cheese, eggs, olive oil, honey, and vanilla extract until smooth.
  • In a separate bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients and mix until just combined.
  • Gently fold in the diced peaches.
  • Spoon the batter evenly into the muffin cups.
  • Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool on a wire rack before serving.
