Equipment

  • 2 baking sheet lined with silicone mats or parchment paper
  • 1 stand mixer or large mixing bowl with hand mixer or whisk
  • 1 cookie scoop or spoon
  • 1 wide shallow bowl for powdered sugar

Ingredients
  

  • 1 15 ounce box strawberry cake mix
  • 2 large eggs at room temperature
  • 1/4 cup vegetable oil
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat oven to 375°F and line two baking sheets with silicone baking mats or parchment paper.
  • Sift powdered sugar into a wide shallow bowl and set aside.
  • In a stand mixer or large bowl, combine cake mix, eggs, and vegetable oil until well mixed.
  • Scoop tablespoon-sized portions of dough and roll each into powdered sugar, fully coating all sides.
  • Place coated dough balls on prepared baking sheets spaced apart.
  • Bake for 10 to 12 minutes until cookies are set.

Notes

  • Cool cookies completely before storing.
  • Store airtight at room temperature up to 5 days or freeze up to 2 months.
  • Use powdered sugar to enhance crackled appearance.
