- 1 cup full fat cottage cheese 2-4%
- 2 tablespoons maple syrup
- 1 teaspoon pure vanilla extract
- 1 ½ cups almond flour
- ¼ cup vanilla protein powder
- 1 ½ cups chocolate chips divided
- 1 teaspoon coconut oil
Blend the cottage cheese in a blender or food processor until smooth.
Set aside 1 cup of chocolate chips, then combine the remaining chocolate chips and all other ingredients in a bowl and mix well.
Refrigerate the mixture for at least 30 minutes to firm up the dough.
Line a baking sheet with parchment paper.
Use a cookie scoop to form even portions and roll them into balls.
Place the balls on the baking sheet and freeze for at least 20 minutes.
Melt the reserved chocolate chips and coconut oil in a microwave-safe bowl in 15-second intervals, stirring after each, until fully melted.
Dip the frozen balls into the melted chocolate to coat, then place back on parchment paper.
Refrigerate until the chocolate coating hardens.
Store finished protein balls in an airtight container in the refrigerator or freezer.
