- 1 pack 15.25 oz white cake mix (Betty Crocker)
- 3 teaspoons Ener-G egg replacer powder plus 4 tablespoons water equivalent to 2 eggs
- 1/3 cup sunflower oil
- 1/3 cup powdered sugar
- Red food coloring as needed
Whisk together the egg replacer powder and water in a small cup; set aside.
In a large bowl, combine the cake mix, egg replacer mixture, sunflower oil, and red food coloring. Add more coloring as desired for intensity.
Mix the dough thoroughly by hand for even color distribution until it reaches a play dough-like consistency.
Refrigerate the dough for at least 30 minutes to improve texture and fluffiness.
Preheat the oven to 375°F (190°C) and lightly grease cookie sheets.
Roll tablespoon-sized dough balls in powdered sugar and place them about an inch apart on the prepared cookie sheets.
Bake the cookies for 9 to 11 minutes, until set; 10 minutes is suggested.
Allow cookies to cool before removing from the sheet.
- Use yogurt, pureed silken tofu, or unsweetened applesauce as alternative egg substitutes.
- Refrigerating dough overnight may harden it; allow it to soften at room temperature before baking.
- Customize colors and flavors with different food colorings or cake mix varieties like red velvet.
